Chef Thomas Bellec, Chief Culinary Director at Appellation, brings a wealth of experience and a passion for local flavors to every dish. Growing up in Brittany, France, his love for food was shaped by his family's bakery and a coastal upbringing filled with fresh seafood.

After training at prestigious culinary schools and working in a Michelin-starred restaurant, Chef Bellec embarked on a 20-year journey with Four Seasons Hotels and Resorts and is an honoree of a Maîtres Cuisiniers de France and Académie Culinaire de France.
