Born from an elegant merger of the culinary and hospitality worlds, Appellation is much more than a typical hotel company. To honor our name, we've brought the best local elements together in a new way: to celebrate food, craft and learning, creating an authentic sense of belonging. We've planted our roots in California wine country with two open destinations, and we're cultivating more in 2026.
